Adobo Grilled Chicken with Pineapple Mango Salsa

Adobo Marinade

  • 2 Jalapeno Chili Peppers, seeded, and deveined
  • 8 Guajillo Chili Peppers, seeded, and deveined
  • 1/4 cup Red Wine Vinegar
  • 1/4 cup light Beer
  • 1/4 cup Olive Oil
  • 1/2 cup diced White Onion
  • 4 Garlic Cloves, roughly chopped
  • 2 teaspoons Kosher Salt
  • 1/2 teaspoon Dried Oregano
  • 1/4 teaspoon Cumin
  • 1/4 teaspoon Dried Thyme
  • 1/4 cup Orange Juice
  • 1⁄4 cup Lime Juice
  • 1⁄4 cup chopped fresh Cilantro
  • 6 Boneless Chicken Breasts

For the Pineapple Mango Salsa

  • 1 C Mango, peeled and diced
  • 1 C fresh Pineapple, diced
  • 3 T diced Red Onion
  • 1 ½ T Jalapeno Pepper, seeded and finely minced
  • ½ Red Pepper, diced
  • ½ C fresh Cilantro, chopped
  • 2 T fresh Lime juice
  • 1 T Honey
  • Salt, to taste

Preparation

Heat a skillet over medium heat, and toast the jalapeno and guajillo peppers, turning them over, until they are blistered. Soak them in enough cold water to cover until they’re soft, about 30 minutes. Drain and discard the soaking water.

Put all of the ingredients into a blender. Blend until incorporated and emulsified. Strain the adobo mixture for a smooth consistency. (This marinade freezes beautifully).

Marinate the boneless chicken breasts in the adobo marinate for at least two hours.  To prepare the salsa, combine all ingredients. Cover and refrigerate for a few hours.

Grill the chicken until cooked thoroughly, about 5-6 minutes per side. Place the grilled chicken on a platter nd top with the pineapple mango salsa. Delicioso!
